Miniature Ice Cream Sandwich Cookies
There is something just SO delicious about an ice cream sandwich. The soft,deep chocolate flavor, the stick-to-your fingers gooeyness, and then the sweet and creamy ice cream mixing together with it to create a single divine treat! I would almost always go for the ice cream sandwich if I ran into the good humor man! Licking my fingers of the sticky-ness is part of the charm! And no matter how full I am, I always feel as if I could eat three in a row..they are more addictive to me than a Dorito®.
I once learned that the reason Dorito’s® became so famous is because it was one of the first snack foods to be created using BOTH savory and sweet ( salt and sugar). Think about that for a moment. How many things can you think of in terms of sweets that can do that? I can think of at least half a dozen! Kettle corn, chocolate dipped pretzels, salted caramels, mango salsa, a margarita-OH YEEAAH BABY! That’s only five you say? Okay, how about figs wrapped in prosciutto? Pears and gorgonzola…well you get the picture!
These mini ice cream sandwich knock-off’s look just like the real thing, sans their size and the ice cream ! Instead I put a thin layer of vanilla bean fudge between the two soft cookies to create a sultry experience likened to the ice cream sandwich…less the brain freeze. The cookies and fudge both contain a small amount of salt, but “just’” enough to make them mighty addictive!
This will make several dozen treats, with some excess fudge left over ( darn it!). I used vanilla bean paste to give them an added vanilla ice cream taste, but pure vanilla is just fine. I don’t EVER recommend substituting artificial vanilla for pure vanilla.
